Pineapple Sweet Potatoes


This is another super simple recipie. I serve this at Christmas and Thanksgiving holiday meals and with Curried Salmon and a green salad.
  • 2 medium to large sweet potatoes or yams
  • 1 can of crushed pineapple in natural juice
  • Brown Sugar (optional)
Cook the sweet potatoes. (I nuke them until the skin peels away easily). Peel away the skin and add the pineapple with as much juice as desired. Mash until well blended. You can also put it all in the blender and have the consistency of applesauce. Add brown sugar to taste if you prefer a sweeter taste. This can be eaten hot or cold. This makes 4-8 servings.
