Mater Keema

This is based on a ground beef (keema=ground beef, mater=peas) recipe from India with lots of taste. You can cook it for a somewhat shorter time, but the longer it cooks the better the flavor.

  • # 1 medium onion
  • # 2 cloves garlic
  • # 1 piece of ginger about 1 inch cube
  • # cinnamon stick (about 1 inch long)
  • # 2 whole cloves
  • # 2 T vegetable oil
  • # 2 peppercorns
  • # 1 bay leaf
  • # 1½ tsp ground coriander
  • # ½ tsp ground cumin
  • # ¼ tsp ground turmeric
  • # 1 lb ground beef
  • # 2 14½ oz cans diced tomatoes
  • # 2 cups peas (fresh or frozen)
  • # salt to taste
  • # hot pepper to taste

Chop onion, garlic and peeled ginger root finely. Heat the oil on medium and add the cinnamon, cloves, peppercorns and bay leaf for 10 seconds and then add the onion, garlic and ginger fry for about 10 minutes then add the corriander, cumin and turmeric and fry for about 5 more minutes. Add the ground beef and brown it. Add the tomato, peas, salt & hot pepper and simmer for an hour adding up to a half cup of water if necessary. Serve over rice.

Beef/Noodle/Mushroom

This is not fancy, but very tasty and it is quick and easy to make. Serve it with a vegetable and/or salad and fruit for desert.
This is one of those recipies where I never really measure anything and I will add more or less depending on what tastes good to me. All measurements listed are approximate.

  • 1 Tbs. oil
  • 8 oz. fresh or 1 can mushrooms, drained
  • 1 medium onion
  • 1 lb. ground beef
  • ½ tsp. beef flavor soup/gravy base
  • 1 can Cream of Mushroom soup + ~½ can milk
  • 1 Tbs.vinegar
  • cooked noodles

Brown the mushrooms and onions until the onions are tender.
Add theground beef and cook 'til done. Add the beef base and and mix with milk until the base is well blended. Add the mushroom soup and blend. Simmer on low until heated through. Serve over hot noodles.

These are the recipes I actually use. They will occasionally updated as I adapt them. They are posted here for family and friends (and visitors!) to use as they wish.
